When it comes to baking, I usually like to try new things more than sticking to the tried and true recipes. The family recipes are great for when you need a sure-fire crowd pleaser, but nothing beats finding a tasty recipe for the first time. However, I do seem to have a weak spot for meringues. There are so many variations to try: coconut, pistachio, cherry, orange, lemon- the possibilities are endless. Plus, few desserts are this pretty and easy to make, and gluten free!


  • Servings: 50-60 cookies

2/3 cup granulated sugar (for extra fine, blend in a food processor for one minute)

3 egg whites, room temperature

¼ tsp cream of tartar, white vinegar, or lemon juice


  1. Preheat oven to 200 degrees
  2. Whip 3 egg whites using the whisk attachment in a large bowl till foamy
  3. Add cream of tartar and sugar a tablespoon at a time
  4. Whip till stiff peaks form
  5. Pipe onto a lined baking sheet and bake for two hours


All these variations are based off of the basic meringue recipe


Add 1-2 teaspoons lemon juice and 1 teaspoons lemon zest. You may want to adjust these measurements depending on how lemony you want the cookies. Because of the added lemon juice, there is no need for cream of tartar.


Add 1-2 teaspoons lime juice and 1 teaspoon lime zest


Add 1 tablespoon orange juice and 2 teaspoons orange zest.


Add 2-3 teaspoons maraschino cherry juice.


These are by far my favorite flavor. Add 1 tablespoon pistachio pudding mix.


Add 2 tablespoons toasted coconut and ¼ teaspoon coconut extract.


1 tablespoon strawberry Jello mix.


1 teaspoon vanilla extract.


1 teaspoon almond extract.


1 teaspoon peppermint extract


1 tablespoon unsweetened cocoa powder and ¼ cup chocolate chip
