I am on a thirty day cleanse. So, in the next few weeks be expecting extremely healthy recipes consisting of quinoa and vegetables. Yay!!!! I’ve been so distracted with cookies I thought to myself “it’s time for a change. Maybe for a little bit, but maybe for three months!”
And you know I had to post this right after my Berry Yogurt Salad which I cherished well it lasted.
The store had blueberries that tasted like you picked them from a bush an hour ago. So sweet but tart. I haven’t had mango for a really long time. So I went to the store today and got so much fresh produce. I think it’s the most I’ve ever gotten in one trip. Please try this!
Quinoa Fruit Salad
3 cups cooked quinoa
1 mango, skinned and chopped
1 cup sliced strawberries
2/3 cup blueberries
juice of 1 lemon
zest of 1 lemon
- Stir all of ingredients together in a large bowl. Enjoy as is or chill until ready to eat. Can be made up to three hours in advance.
