GF Cream Cheese Filled Lemon Cookies

I love lemon cookies. Lemon anything really. But one of my biggest problem is actually getting the cookies to taste like lemon. There have been times I have added almost a quarter cup of lemon juice and still failed to get the desired taste. However, these cookies have the perfect lemon flavor. The secret is in the cream cheese. It pairs well with the lemon, and really enhances the flavor. Plus, it keeps the cookie from being dry and boring.

  • 1 egg
  • 1 tbs lemon juice

  1. I just ate a big meal, but… DROOLING! Yours turned out so beautifully round and perfect. These look absolutely delicious. I could take 10! Great photography, too 🙂 Is the xanthan gum omittable?

    1. Thanks! I might have taken 10… 😛
The xantham gum can be substituted for ground psyllium husk or ground chia seed. I haven’t tried it without xantham gum or a substitute, but since it is just cookies, it would likely not make a huge difference.
