GF Cream Cheese Filled Lemon Cookies

I love lemon cookies. Lemon anything really. But one of my biggest problem is actually getting the cookies to taste like lemon. There have been times I have added almost a quarter cup of lemon juice and still failed to get the desired taste. However, these cookies have the perfect lemon flavor. The secret is in the cream cheese. It pairs well with the lemon, and really enhances the flavor. Plus, it keeps the cookie from being dry and boring.

Cream Cheese Lemon Cookies

  • Servings: 12 Large Cookies
  • Time: 40 min
  • Print

Ingredients

For the cookies

  • 1 1/3 cups gluten free flour mix
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1 stick butter, melted and cooled
  • 1 egg
  • 1 tbs lemon juice
  • 1 tsp lemon zest

For the filling

  • 1 package Cream Cheese, softened
  • 1/3 cup granulated sugar
  • 2 Tbs lemon juice
  • 2 tsp lemon zest

Directions

  1. Preheat oven to 350 degrees
  2. Whip cream cheese with sugar for 1-2 minutes
  3. Fold in lemon juice and zest
  4. For the cookies, whip together butter and sugar
  5. Add the egg, lemon juice, and lemon zest, and beat till smooth
  6. In a separate bowl, mix together all the dry ingredients
  7. Mix dry ingredients and wet ingredients together
  8. Take the cookies dough, and form medium sized circles about 1/4″-1/2″ thick. Onto each circle, spoon on about 1 tablespoon of the cream cheese mixture. Gently fold the circle into a ball, and place on a lined baking sheet
  9. Bake for 18-22 minutes, or until cooked through
  10. Cool on a baking rack for 10 minutes, and enjoy!

    1. Thanks! I might have taken 10… 😛
      The xantham gum can be substituted for ground psyllium husk or ground chia seed. I haven’t tried it without xantham gum or a substitute, but since it is just cookies, it would likely not make a huge difference.
