Gluten Free Spice Cake with Cream Cheese Frosting

When it comes to gluten-free baking, cakes are a difficult thing. They can be gritty, dense, and heavy. When the magical transformation caused by gluten in a regular cake is absent, it can be a difficult thing to recreate. Luckily, using some xantham gum and a careful combination of ingredients, you can make a cake that tastes just and delicious as one made with all-purpose flour.

This is one of the few cakes that I have found to be perfectly light, but without the aftertaste so often found in gluten-free goods. The frosting is of course just wonderful. There is something incredible about the taste of spice cake and cream cheese frosting. It is a pretty simple pairing, but for some reason is amazing. I could have eaten the entire thing but luckily I was able to stop myself (:

Gluten Free Spice Cake with Cream Cheese Frosting

  • Servings: 8
  • Print


  • 1 1/4 cup all-purpose gluten-free flour
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon baking soda
  • 1 teaspoons baking powder
  • 5 tablespoons unsalted butter, softened
  • 3/4 cups granulated sugar
  • 3 egg whites
  • 2/3 cup buttermilk or 2/3 cups almond milk + 3/4 tbsp lemon juice mixed in,
  • 1 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves

For Frosting

  • 6 oz softened cream cheese
  • 1/4 cup softened salted butter
  • 1 tsp vanilla
  • 1 cup powdered sugar


  1. Preheat oven to 350 degrees. Grease a 9″ round pan thoroughly
  2. In a large bowl, cream together butter and sugar. Mix in egg whites and milk in a separate bowl, and stir into butter mixture
  3. Sift the dry ingredients into the wet, and stir well.
  4. Pour into prepared pan, and bake for 20-25 minutes
  5. While the cake cools on a baking rack, cream together the butter, cream cheese, and vanilla. Add in powdered sugar, and stir till combined. Ice the cake, and enjoy!
