Helllloooooo!! its been 2 months since i posted last, i did draft a post like… 2 month ago but i decide not to post that one, so Thursday night+movie+computer on my lap= me posting on Friday. im posting this on Friday. which is obvious cause your reading this. anyay when you read this ill be in a car, being in a car for 2 and a half hours, then ill be ziplining over lions, giraffes, and zebras.  WOOOOO!!!! this trip was last minute and im sooo excited!

and then the next thought was…. “What if you got a really tall person and accidentally hit the giraffe in the head?” poor giraffe.

the best part is its going to be 20 degrees colder than 105 degree Pheonix AZ.


anyway on to the recipe. this is a delicious copycat Cafe Zoupas salad recipe. basically its strawberries, apples, spring mix, citrus dressing and the best cheese ever, fontina!!!

this made me like spinach kinda.

this is the dressing i used, if you cant find this (i got this at my local Fry’s) use a strawberry vinagarette.



its so good. ive made this like 10 times and everyone loves it. the fontina is the best part. enjoy!DSC_0014

Strawberry Copycat Harvest Salad

  • Servings: 5

6 cups spring mix (mixed baby greens)

2 chicken breasts

2 cups sliced strawberries

2 thinly sliced apples, or chopped

citrus poppyseed dressing by Private Selection (or strawberry vinagarete if you cant find the citrus dressing)

1 cup shredded fontina cheese


  1. season chicken with salt and pepper. grill or cook on the stove until cooked, about 5 minutes per side. let it cool and dice.
  2. put some spring mix on a plate. top with strawberries, apples, fontina, and dressing

  1. Ooh this salad looks so good! ❤ I love trying different kinds of salads, especially if there is fruit involved, haha. This one looks like it might be able to sway me into liking spinach! Also, I must add that I was so excited to see a post by you show up in my Reader! I've missed you! ❤ sounds like you got to go on an epic trip! I've been ziplining once (over an apple orchard!), but doing it over animals sounds SO exciting!!!


    1. I’m glad to be back! Sorry I haven’t been commenting or anything on your blog! I’m going to start commenting more. Zip lining over an apple orchard sound fun! The trip was awesome, except when I landed at 20 miles an hour into a stopper… my ear popped and it hurts….
