It’s really easy. Just prepare pancake batter using a mix or following this Homemade recipe. Scoop them into a muffin tin….
And top with desired toppings. I used cinnamon sugar and chocolate chips for two different kinds. I once made the mistake of mixing the chocolate chips into the batter. They all sunk to the bottom while baking and turned into an ugly site.
Bake them, and they turn out like this!
I also made some mini pancake muffins, which were adorable.
These come out a little more dense then normal pancakes, but they are portable and very easy, so you have time to do other things while they are baking instead of having to flip pancakes constantly.
One batch of pancake batter will make about 8 muffins.
IngredientsBatch of boxed or Homemade Pancake batter
optional add-in’s, like chocolate chips, blueberries, cinnamon sugar, etc…
- Preheat oven to 350 degrees F. Grease a muffin tin.
- Scoop 1/4 cup of batter into each thing of the muffin pan. Top with add in’s. Make sure not to fold them into the batter or they will sink. You can make mini muffins by scooping 2 teaspoons of batter into the muffin pan.
- Bake for 15-17 minutes for big ones and 8-10 minutes for little ones.
